CNC Confectionery Water Cutting (Watercut LZ)
Watercut LZ uses CAD files based on software that came with the machine, with the design program being able to edit even scanned image files. Provides unlimited possibilities in cutting shapes, absolute uniformity and dimensional stability in all portions, speed and minimal loss as it exploits the largest possible area from the product to be cut.
The cutting is done with a beam of water under pressure 2,700 bar, for products with a maximum thickness of up to 7.5 cm and uses nozzles with a maximum diameter of 0.17 mm. Indicatively, you can cut decoration on a chocolate sheet up to 1cm thick, frozen products such as cakes and pastries up to 5cm thick and fresh corresponding products up to 8cm thick.
The water in the beam does not soak the product as the beam penetrates it at 2.5 times the speed of sound, which in fact evaporates much of it. For hygienic reasons, the cutting water is not recycled.
In this machine the height adjustment on the cutting surface is fixed and manual. Therefore the product to be cut should not have significant height variations on its surface, for automatic height adjustment see Watercut XS .
Also Watercut LZ does not have a flow stop valve as an option and this means that it can not temporarily stop the cutting process to remove an internal part, for this possibility see Watercut LX or the Watercut XS
